Passover begins on the 15th of Nisan, in March or April, and lasts seven days in Israel and eight elsewhere. It recalls the Exodus of the Israelites from slavery in Egypt; the name comes from the tenth plague, when the firstborn of Egypt died and the houses of the Israelites were passed over. They left in such a hurry that their dough had no time to rise, so for the whole holiday Jews eat matzah and clear their homes of chametz, anything leavened.

Seder means order, and the meal follows a fixed set of steps read from the Haggadah. Each item on the plate is a reminder: maror, often horseradish, for the bitterness of slavery, charoset of apples and nuts for the mortar the slaves laid, and parsley dipped in salt water for their tears. The youngest child asks the Four Questions, a cup of wine waits for the prophet Elijah, and the children hunt for the afikoman before the meal can end.
