The best-known story about the candy cane says that a choirmaster at Cologne Cathedral bent sugar sticks into crooks in 1670 to keep children quiet during the Nativity service. It is often told and has never been proven. What is clearer is that the early canes were plain white; pictures of canes with red stripes do not show up until around 1900.
Canes were bent by hand, slowly, and many broke. In the 1920s Bob McCormack began making them in Albany, Georgia, and in the 1950s his brother-in-law, a Catholic priest named Gregory Keller, built a machine that bent the hooks automatically, which made the candy cheap enough for every tree. The cool feeling of peppermint comes from menthol, which sets off the same nerve sensors in the mouth that respond to cold.
