Before electric freezers, ice cream took muscle. In 1843 Nancy Johnson of Philadelphia patented a hand cranked freezer: a metal can of cream set in a bucket of ice and rock salt, with a paddle called the dasher inside to keep it moving. The salt is the trick. It lowers the temperature at which the ice melts, pulling the bath well below freezing, cold enough to set the cream as it turns.
Two Rivers, Wisconsin and Ithaca, New York still argue over who served the first sundae, in the 1880s or 1890s. The cone got its big moment at the 1904 World's Fair in St. Louis, though Italo Marchiony, a New York vendor, had patented a mold for edible cups the year before. In New England the sprinkles on top are called jimmies, and anything sold as ice cream in the United States must be at least 10 percent milkfat.
