Food Safety Word Search

This food safety word search follows the four steps food safety experts teach, clean, separate, cook and chill, along with the food thermometer, germs such as salmonella and listeria, leftovers in the cooler, and the danger zone where bacteria grow fastest.

The danger zone is the range between 40 and 140 degrees Fahrenheit, where bacteria can double in number in about twenty minutes. That is why the Department of Agriculture says perishable food should not sit out for more than two hours, or one hour on a day above 90 degrees, and why leftovers go into shallow containers so they cool quickly in the fridge. Poultry is safe when the thickest part reaches 165 degrees, and the only reliable way to know is a thermometer, since color alone can fool you.

American food inspection began with a novel. Upton Sinclair spent seven weeks undercover in the Chicago stockyards and described the filth of the meatpacking plants in The Jungle in 1906. Readers were horrified, and on June 30 of that year President Theodore Roosevelt signed both the Meat Inspection Act and the Pure Food and Drug Act. Sinclair had hoped to make readers care about the workers, and he later said he aimed for the public's heart and hit its stomach.
