Most baked goods rise on gas. Yeast is alive, and as it eats the sugars in flour it gives off carbon dioxide, which kneading traps in a stretchy web of gluten, the protein that forms when wheat flour meets water. Baking soda makes the same gas in seconds when it meets an acid such as buttermilk. Baking powder carries its own dry acid, and the first one sold in England was made in 1843 by the chemist Alfred Bird, whose wife could not eat yeast or eggs.

The croissant is Austrian in origin. It descends from the kipferl, a crescent roll eaten in Vienna for centuries, and it reached Paris when August Zang opened a Viennese bakery there around 1839. The flaky version, with butter folded into the dough again and again, was a later French change. Sliced bread is newer still: Otto Rohwedder's slicing machine first ran at a bakery in Chillicothe, Missouri, in July 1928.
