This cooking word search fills a kitchen: the recipe and its ingredients, a wok, a pan and a pot, the spatula and colander, a knife on the cutting board, garlic and onion to slice, and Julia Child, who taught America to cook on television.

Browning is where much of the flavor comes from. In 1912 the French chemist Louis-Camille Maillard described what happens when proteins and sugars meet high, dry heat: they react to make hundreds of new flavor compounds and the brown crust on a seared steak, toasted bread or roasted onions. It is why cooks pat meat dry before it goes in the pan, since wet food steams instead of browning.

The way a restaurant kitchen is run comes from Auguste Escoffier, who in the late 1800s organized his cooks into a brigade, each with one station: sauces, fish, roasts, vegetables, pastry. Julia Child brought French cooking into American homes. Mastering the Art of French Cooking, written with Simone Beck and Louisette Bertholle, came out in 1961, and her show The French Chef began on Boston public television in 1963.
