This barbecue word search covers the grill and the smoker: charcoal and hickory, brisket, ribs and pulled pork, burnt ends and the smoke ring, a dry rub or a mop of sauce, and the four great American styles from Texas, Memphis, Kansas City and the Carolina coast.
The word came ashore with the Spanish. The Taino people of the Caribbean cooked on a frame of green sticks set on posts over a fire, and Spanish explorers wrote down their word for it as barbacoa in the early 1500s. In English it first meant the frame, then the meat, and finally the party.
The regions settled into styles by what they had. Eastern North Carolina cooks the whole hog and dresses it with vinegar and red pepper, Texas smokes beef brisket over post oak, Memphis is known for ribs with a dry rub, and Kansas City finishes almost anything in a thick, sweet sauce of tomato and molasses. The pink smoke ring under the bark of a good brisket is chemistry: gases from burning wood react with a protein in the meat and fix its red color before the heat can turn it gray.
