Many of the names say where a dish came from, or where people thought it did. The hamburger is named after Hamburg, although the sandwich itself was put together in the United States. French fries are claimed by Belgium as firmly as by France, and nobody has settled it. Filet mignon is French for a dainty fillet, the small end of the beef tenderloin.
The fajita started as skirt steak, a cheap cut handed to Mexican ranch hands in south Texas as part of their pay; the name means little strip or belt, after the cut, and it became a restaurant dish only in the 1970s. Sushi began as a way of keeping fish in fermenting rice, and the rice was thrown away. The fresh, vinegared kind was street food in Edo, now Tokyo, in the early 1800s.
