The word describes a knife stroke. Poke is Hawaiian for cutting something crosswise into pieces, so it names the shape of the fish rather than the dish, and it is two syllables, closer to POH-kay than to the English verb of the same spelling.

What Hawaiians ate under that name for generations was much simpler than the bowls now sold on the mainland: raw skipjack tuna with sea salt, limu seaweed gathered off the rocks, and inamona, the roasted and crushed kernel of the kukui nut. Rice underneath, mayonnaise, sriracha and a queue of toppings are a recent export, barely a decade old outside Hawaii, and closer to a build-your-own salad than to the original.
